Been doing HF for like 5 years, generally happy with it. Broke out this stromboli kit yesterday, and my immediate thought was "did they get bought by private equity?"
The new cards seem like a downgrade in every way, much harder to read. And this recipe was super hard! My wife is a great cook and I'm at least okay. The dough was hard to work with, the recipe presents it like you can just stretch it into a nice rectangle (look at the picture!), but it doesn't work that way, it sticks and tears. Messing with it took a long time.
Anyway maybe I'm an idiot but my recommendation is to skip the stromboli.

They do give the correct tip – if the dough won’t stretch and keeps springing back, you let it rest for 10-15 mins and try again. You may need to do this 2-3 times. It also helps to take the dough out of the fridge 1-2h ahead of time. Pizza and breadit subs haver basic dough tips like this
The cards are so horrible. They use a way lighter and smaller font that’s so hard to read. They did the same with the ingredients labelling. Some packets are now literally impossible to read without a magnifying glass.
Pizza-type dough is just generally not the easiest to work with. I take it out of the fridge way earlier than they suggest to let it warm, as someone else mentioned. I also use flour to help with the stickiness. Agreed that the new cards are not great – very crowded, small font, and clearly they use AI for the recipes as many cards have errors.
I recently did the Pork Sausage & Pepper Stromboli.
I actually really like it, and didn’t have the issues you described with the dough.
I was a few weeks ago though so had an older recipe card.
Don’t know if the Stromboli cards are like the flatbread cards where there is no consistency in the instructions from one kind to the next.
I didn’t find it any more difficult than many other HF recipes
