30 gallons of Hawaiian mac salad for a 700 person buffet tomorrow. Needed a 40 gal tilt skillet to mix it all.

    Actually just made this as part of a wedding tasting menu. Literally Mac salad that is eaten in Hawaii. It has a little more sugar than ‘mainland Mac’.

    We had a stainless steel bowl on wheels that was around 35 gallons. Best thing ever for mixing 250# of potato salad.

    For the curious, this was approximately 100# of cooked mac noodles, 9 gallons of vegan mayo (only mayo we’re allowed to order) 5#+ of matchstick carrots, about 1/3 to 1/2 gallon if apple cider vin, 6 qt of sliced green onion and about 7-8 fistfuls of S+P and about 1-1.5 qt of granulated sugar. All of this was eyeballed and it tastes fantastic.

    What is supposed to be in this? I have only had it at the chain Hawaiian Brothers, and it is completely flavorless slop. All of their food id actually quite bad, so I assume their version is just shit, but I am not sure what it is actually supposed to taste like.

    The best word i could use to describe its flavor is “blank.”
