Could never achieve something like this with my cast iron pan, sour dough, steam in the oven etc. But a silicone pan, just sprayed with olive oil, collapsed after rising 4 hours too many, no water, random temperature because I had already given up on it and it’s amazing.

Try is again and see how it turns out. I’ve messed with boxed items over the years and sometimes find a better way, sometime not so much.
