Bajra na vada is a traditional Gujarati snack made from bajra (pearl millet) flour, typically served hot with tea, chutney, or curd.
They’re crispy on the outside, soft inside, and have a slightly nutty, earthy flavor from the bajra.

Here’s a basic recipe:

Ingredients (makes ~12 vadas)

1.5 cup bajra flour (pearl millet flour)

2–3 tbsp wheat flour (optional, helps binding)

2 tbsp chopped coriander leaves

½ tsp ginger -green chilli paste

½ tsp white til

sugar

lemon juice

1 cup methi leaves

Salt to taste

spices:

Red chilli powder
turmeric powder
coriander powder

Oil for deep frying

Method

1. In a bowl, mix bajra flour, wheat flour, coriander, chillies, ginger paste, cumin seeds, sesame seeds, and salt and spices.

2. Add a little water and knead into a stiff dough.

3. Divide into small portions, roll into balls, then flatten into discs (about 2–3 inches wide).

4. Heat oil in a deep pan. Fry the vadas on medium heat until golden brown and crisp.

5. Serve hot with green chutney, garlic chutney, or curd.

💡 Tips:

Traditionally, wheat flour isn’t always added, but bajra alone can be tricky to bind—so beginners might prefer using a little.
