Finally got the hang of my new grilla pellet smoker enough to feel comfortable trying my first ever brisket. I need to improve a bit on trimming my brisket, but overall I was happy with how it turned out.

    when i stop at around 195 IT that’s when it’s usually probe tender. but it’s already falling apart. i check the probe constantly and it’s always exactly at 212f at boiling water. i’m seriously thinking about maybe stopping at 190f instead.
