Stuffed dried eggplant🌿🍆
Once upon a time, there were eggplants dried with the kiss of the sun in the ancient lands of Anatolia. These eggplants were among the most precious of the flavors carried to the tables by the hands of mothers who saved the abundance of summer for winter.

One day, the most skillful woman in the village entered the kitchen. She took down the jars from the shelves; in those jars, dried eggplants from the summer were hidden like jewels filled with the summer sun.

STUFFED DRIED EGGPLANT:

3rd Dolma (Capia pepper)
We use rice, parsley, mint, dill, salt, red pepper flakes, red chili powder, black pepper, tomato paste, water, vegetable oil, olive oil. The most vibrant red of the capia pepper would be wrapped in the stuffing and stuffed with rice. Parsley, mint and dill adorned the heart of this stuffing, salt brought the taste of the earth, red pepper flakes and chili powder carried the courage of Anatolia, black pepper carried the night, tomato paste and water carried life. Vegetable oil and olive oil made this dolma the star of the table.

Thus, three different dolmas would come together on one table and write a new story with the abundance of Anatolia, the warmth of the Mediterranean and traditions from the past. This story would start from the kitchen table of a family and turn into a legend carried from generation to generation.
