
This is adapted from Dana Cree’s Milk Chocolate Frozen Yogurt recipe. Made it tonight and it was delicious! Was aiming to lower the sugar content and it came out beautifully, with a slight tang from the yogurt.
- 1.5 cups/ 300g full fat yogurt
- 1 teaspoon/ 5g salt
- 8 ounces/ 200g Lindt EXCELLENCE Madagascar 70% Cacao Dark Chocolate
- .75 cup/ 150g heavy cream
- .75 cup/ 150g whole milk
- .5 cup/ 100g sugar
- .25 cup/ 50g glucose
- .12-.25 tsp Xanthan gum
—— - Mix yogurt & salt. Cover & refrigerate.
- Chop the chocolate, place in non-reactive bowl.
- Heat dairy, sugar & glucose – whisk to keep from scorching. Add xanthan gum as you remove from heat & whisk until blended.
- Pour dairy mixture over chocolate, let sit for one minute then whisk until blended.
- Cover & cool mixture in fridge or use an ice bath.
- When cool, blend with yogurt mixture.
- Strain if desired. (Optional)
- Cover & cure overnight before churning.

This looks really good! I have been trying to find a good chocolate frozen yogurt. The first one I tried was not sweet enough. (Just tangy and tasted like plain greek with chocolate in it, but it used cocoa powder)
