Schiacciata di Zucchini
Ingredients:
 • 2 zucchini, thinly sliced
 • 1 yellow onion, thinly sliced
 • 1 ½ cups all-purpose flour
 • 1 ½ cups water
 • ¼ cup grated Parmesan cheese
 • ¼ cup breadcrumbs, plus more for topping
 • 2 teaspoons paprika
 • Salt and pepper, to taste
 • Extra virgin olive oil
Directions:
 1. Preheat the oven to 400°F (200°C).
 2. Using a mandolin, slice the zucchini and onion as thinly as possible.
 3. In a large bowl, whisk together the flour and water until smooth to form a batter.
 4. Add the sliced zucchini and onion to the bowl, along with the Parmesan, breadcrumbs, salt, and pepper. Mix everything together thoroughly with your hands until the vegetables are evenly coated in the batter.
 5. Line a baking sheet with parchment paper and drizzle it with olive oil. Pour the zucchini mixture onto the sheet and spread it out evenly.
 6. Drizzle the top with more olive oil, sprinkle with extra breadcrumbs, and dust with paprika.
 7. Bake for 35–40 minutes, or until golden brown and crispy on the edges.
 8. Let cool slightly, then cut into squares. Serve warm or at room temperature. Enjoy!
