This is hands down the best carrot cake recipe I’ve ever made. It’s easy, made from scratch, wonderfully moist in the middle, has the creamiest cream cheese frosting, and is absolutely delicious!

Thousands of home cooks have made and loved our recipe for incredibly moist carrot cake. This carrot cake is one of the easiest cakes on Inspired Taste and has the creamiest, most delicious frosting. We originally shared this in 2015 and are excited to share this updated video today. Start by whisking flour, baking soda, salt, and cinnamon together. Then I whisk oil, granulated sugar, brown sugar, vanilla, and eggs in another bowl. The oil and sugar make this the most moist and tender carrot cake we’ve ever made. Combine the wet and dry ingredients. Fold in your carrots, nuts, and raisins. The nuts and raisins aren’t for everyone, so if you aren’t a fan, no worries. Just leave them out. Divide the batter between two cake pans and bake in a 350° F oven until springy when you touch the tops. While the cake cools, make our favorite creamy frosting with cream cheese, powdered sugar, and heavy cream. When the cake layers are completely cool, swirl on your frosting.
