Let’s make this delicious Curry Lentil Soup! All you need is 1 pot and about 10-15 mins of your time. Recipe ⬇️:

Ingredients:
1 cup dry lentils
2 Russet potatoes, peeled and cubed
1-2 carrots, sliced
1 tsp minced ginger
3 cloves of garlic, minced
5 cups of vegetable stock
1 15 oz can of crushed tomatoes
2 tsp Curry powder
1/2 tsp Cayenne pepper
1/2 tsp crushed red pepper
1 tsp tumeric
1 tsp cumin
2 cups of chopped collard greens
Salt & black pepper to taste

I’m no chef but I be cooking and this time of year you can never go wrong with a good soup and this Curry lent to soup is nothing short of amazing it’s super easy to make and it’s packed with so much flavor let’s get into it heat olive oil in a pot on medium heat then sauté your diced onions and sliced carrots seasoning with salt then add in some minced garlic and minced ginger adding your potatoes your seasoning mix mix until fully coated then season again with salt and black pepper add five cups of Veggie stock crusted Tomatoes lentils and your chopped collard greens get that a good mix season again with salt and black pepper The Taste then bring to a boil and simmer for about 30 minutes until your lentils are nice and tender and it should look as amazing as this

  2. i am not crazy about Indian spices but that soup looks delicious. I will leave the curry out but add a bit of thyme,bay leaf. ❤
