Perfect Romesco Sauce
Ingredients:
3 large red bell peppers
2 ripe tomatoes
2 garlic cloves
40g toasted almonds
40g stale bread
1 tablespoon vinegar
1 teaspoon sweet paprika
1/2 teaspoon smoked paprika
Extra virgin olive oil
Salt and pepper
Instructions:
Roast the peppers, tomatoes, and garlic at 200°C (390°F) for 30 minutes until well charred. Cover for 10 minutes, then peel them.
Toast the almonds in a pan until golden.
Place the peppers, tomatoes, roasted garlic pulp, nuts, bread, vinegar, both paprikas, salt, pepper, and olive oil in a blender. Blend until smooth and creamy. Adjust salt, pepper, or vinegar to taste.
