Semolina dough

250 fine semolina
250 coarse semolina
150 plain flour
Cinamon
Black pepper
Salt

300 water
150 veg oil
Orange blossom water

600 sugar
400 water

Right guys, this is is macrude delicious specialty from Morocco, North Africa. Semolina and date paste inside flavored with orange blossom fried and then dipped into a syrup. It’s so good. Very naughty though, but so good. So, should we make it? So, first things first, we’re going to do our uh date paste. So, I’m using that blender. I ped all my dates and uh it’s very sticky. So, we just blend them together until we have a beautiful paste like that. Lovely. [Music] Right. So now we’re going to make the semolina paste. So we need some water which we’re going to warm up with vegetable oil. So 300 g of water. 150 g of vegetable oil. there and some orange blossom. That smells so good. Quantity as you want. It’s quite strong. So, we’re going to warm that up in a bowl. Right. In a bowl going to put 250 g of fine semolina. Yeah. And 250 of course semolina. Yeah. Some flour 150. A bit of seasoning. Pinch of salt. Some ground black pepper, just a pinch, and a bit of cinnamon, tablespoon, something like that. Okay, let’s mix that up. Okay. So, when it’s all mixed like that, we got our warm water, oil, and orange blossom. I’m going to use a spatula. Now we’re going to finish working on the bench. [Music] Let’s pick up all the pieces inside the door. Love up. There you go. [Music] Right, this resting on the side. Now we’re going to do our date paste. Going to use our same bowl. So we need 500 g. [Music] That’s quite a lot. There you go. 500. It’s not much. Right. So here we’re going to put some ground almond two soup spoon that will help to remove the stickiness of it. A bit of blossom orange. [Music] Tiny drop of oil. Okay, let’s mix it with the hands. Let’s test it. Still a bit sticky. So, we’re going to add a little bit of ground almond. There you go. Let’s test it. [Music] You don’t want too much orange blossom because it will cover the date flavor. So just the right balance is good. Okay. So that’s lovely. This one we don’t want it too sticky but quite sticky as well. So in between. [Music] Right. Let’s build it. Little bit of fine seimolina. Now cut this dough in half. Cut that paste in half. And let’s do it. [Music] So we roll it by hand. Actually, you can use a rolling pin. Let’s see with the rolling pin. So, 1 cm thick. Yeah. [Music] A nice rectangle. Now add that sausage. same length of your dough on top. Let’s roll it. Roll it. Perfect. Now here we close. So your sausage is inside. And now we’re going to flatt it up. With the help of the fork, I’m going to score it. And then we can cut it little slice like so. There we go. Let’s do the other one and then it’s time for frying it. Okay, just before frying it, we’re going to start syrup so we can dip them in once they are cooked. So 300 gram of castor sugar. Uh let’s do double 600 400 of water. So it’ be quite a thick syrup. [Music] some honey. What do you like [Music] and a bit of lemon juice? So, the lemon juice will help not to crystallize the syrup cuz it’s quite a thick syrup. Any drop Voila. Right. The oil 170 180°. Let’s fry them. until nice and golden cut off. We’re going to turn them around in a bit. There you go. Nicely golden. So once it’s fried, we’re going to dip them dip them into our syrup which has cooled down now. It’s still a bit warm, but see how thick it is. Glaze your finger. Little honey flavor. Acidity of lemon. Lovely. So we dip them in. They’re still warm as well. So it’s going to suck in. Yeah. Turn them around. [Music] Lovely. And that’s it. All done. Enjoy, guys. [Music]
