I baked my potatoes the night before so all I had to do in the morning is halve, scoop, and air fry them. Full recipe in comments.

    Baked the potatoes the night before. I do mine for 1 hour at 420F.

    Next morning, halve and spoon out your taters, sprinkle salt n pep on them.

    Air fry the scooped out halves 8 minutes at 400 or until preferred crispiness.

    Make your preferred scramble mix using the carved out potato bits in the scrambled eggs, I also add turkey bacon and cheddar to mine.

    Take the now air fried halved potatoes out of the air fryer and put a layer of cheddar cheese on the bottom, then scoop the egg mix into them. Top with more cheddar.

    Put back in the air fryer or oven on BAKE MODE (do not air fry again with the topper cheese you’ll make a mess) 400F for two minutes or until cheese is melted to perfection.

    Twice baked breakfast potatoes? I make twice baked potatoes all the time and this is basically them with breakfast ingredients
