On a $25 weber grill but I try to get creative. Soaked hickory wood chips on top of the coals before I put the steak on the cool side and smoke rolled for about thirty minutes before a hot and fast sear flipping every 20-30 seconds.

Finished with Maldon flaky smoked salt.

What do you guys think? Smash or pass?

    So I’ve been trying to figure out how to do this on my Weber. How do you keep the coals hot enough to sear at the end of 30 mins? Mine isn’t as hot to get a good sear.
