[Music] So, we’re starting today’s recipe with four freerange eggs cracked right into the bottom of a large mixing bowl. You can use regular eggs, too, if you prefer those. They don’t have to be freerange. Now, let’s bring in cottage cheese. I’m using low-fat 2% cottage cheese. Want two cups of this. Bam. Let’s give it a pound. Get that in there. Get the big ploop. There we go. Very nice. All right. Still got a little bit in there. Let me grab my spoon. Clean this out a little bit better. Don’t want to waste any of that precious cottage cheese. So tasty. So proteinpacked. It’s a great ingredient for this recipe. Now some vanilla extract. I’m going to go ahead and get my measuring spoons. We want one teaspoon of vanilla extract into those eggs and cottage cheese to add some better flavor, a little bit of sweetness. Traditional vanilla. And now 1.25 cups of self-rising flour. Now, secret, I actually used pancake mix. Same as self-rising flour. You can use either, whichever you prefer. That’s why there’s a little bit of mini chocolate chips in there. There were some fun. Pancake mix. And now 14 cup maple syrup. You use traditional maple syrup. If you want lower carbs, use Lacanto like I did. It’s sweetened with alulose. So, I got that maple syrup in there. Very nice. No more ingredients to add at this point. Just grab a spatula. Let’s start to get the wet and the dry mixed together. Get that vanilla mixed in there as well. Break up those yolks. I don’t want that cottage cheese to be quite so thick. So, once we have it mixed together like we do with the spatula, I’m going to grab my cake beater or my electric hand mixer. First, let me get this off the spatula. Don’t want to waste any of our pancake mix that we worked so hard. Just kidding. To make All right, let’s get this blended or beef a little bit finer now. Get that cottage cheese broken down into smaller pieces and really really Integrate all the flour and eggs and vanilla together along with the potted cheese too. Like I said, looking good. Almost there. Very good. Now, let’s get it off of our beers. Very nice. Okay. So, from here, I’m going to bring in a muffin tin or not a tin, silicone muffin pan. It’s a large one. You can make these into pancakes, too. I’m actually making them into muffins, as you can see in that pre-sprayed muffin pan. because I thought this would work a little bit easier than trying to make a bunch of giant pancakes. This is more efficient and I am all about efficiency. If it’s in a cupcake tin or on a pancake platter, I don’t think the taste will be that different. Do you? This recipe has been so cool and so easy so far. Now, we’re going to go in the oven at 350° for about 12 to 15 minutes. Watch these rise. Get gold going brown on the edges, but don’t let them get burnt. We’ll see you then. All right, so it’s been 15 minutes. Look at this. Oh, so nice. So easy. That’s why these silicon tins are so great to work with. Just comes right out like so. So easy to do after it cools off. Let’s just get them all pushed through here. These are smelling wonderfully. Look how fluffy they are. Just beautiful. They are not only packed with protein, but they’re still light and fluffy like traditional pancakes should be. That cottage cheese will add a little bit of cheesy flavor in there, too, which I think will be great with the sweetness from the maple syrup and the vanilla as well. Almost done. Just got a few more to get out of here and then I can give this a taste and see how we did. We got there. Let’s get them nicely arranged like so. Shazam. Cut them open. See how they are in the middle. They’ve passed the toothpick test. So, they should be perfect for the taste test to Let’s see. Oh, nice. Steamy. And now a little bit more of that syrup for dipping for the taste test. All right. Time to see if these are going to live up to all the hype. They smell great. They look so moist. You could see that steam coming off. Don’t worry, let them cool off a little bit. I must say I am impressed. That is delicious. God, I could definitely eat these all day. Maybe I will.
