Warm summer day, cooking sea bass and courgettes on the barbi. Crispy skin, soft courgettes, just heat & simple tasty food.
1 gutted sea bass
2 courgettes (go wild w/ colours)
2 garlic cloves, sliced
1 red chilli
Fresh basil
1 lemon
Olive oil, salt, pepper
Booze & cigs (optional but encouraged)
Butterfly the fish: head off, spine out, ribs gone, pin bones tweezed. Trim it neat.
Fry garlic in oil till soft & sweet, not crispy. Burn the chilli on the grill till skin slips off. Slice courgettes and add to garlic.
Oil the grill (tea towel trick). Pat fish skin dry, oil + salt. Grill skin-side down, med-high heat. Oil + salt the other side.
In a tray, mix olive oil + lemon zest. When fish skinโs crisp, rest in tray skin-down, flip to finish gently.
Chop chilli & basil (donโt bruise), mix into courgettes once wilted.
Plate: courgettes first, lemon squeeze, then bass front-side up, resting juices over top. Serve w/ lemon half.
