Cheesy Stuffed Portobello Mushrooms in 15 Minutes!

You’ll need:

2 portobello mushrooms
1 tbsp avocado oil
Salt to taste
2 garlic cloves
¼ cup onion
¼ cup bell pepper
Mushroom stems
¼ tsp each: black pepper, Italian seasoning, chili flakes
1 tsp ketchup (optional)
½ cup chopped greens (spinach or spring mix)
½ cup shredded mozzarella

Steps:
Bake mushrooms at 350°F.
Sauté veggies in oil + season.
Mix in greens, stuff mushrooms, top with cheese, and bake again!
