So I planted 3 this year (my first time growing them). These are just the bell peppers I picked yesterday and this morning because they were big enough to be weigh down the branches to the point of nearly snapping.

So, I’ve been trying my hand at pickling (jars have probably 1.5lb of banana pepper rings with 2-3 sliced jalepenos for heat) but what in holy hell am I supposed to do with all these green bell peppers? Again, these were picked only because I had to. There’s another dozen ready to go still on the vine out there…

    Nice green peppers! Make meals with lots of peppers! Use them in eggs, cream of mushroom chicken recipe, sandwiches, salads. As for what you have left, I’ll be watching for the responses on ways to store them, I’d like to know myself.

    Well come fall yes, the plant will slow down in production. When I have a lot of peppers like this ,I cut up and freeze for another day.

    Make stuffed bell peppers for a meal…and invite friends! I distribute extra veggies to neighbors who appreciate it.

    Oooh lovely pepper harvest, especially with the cold start we had up here!

    I freeze a good amount of my extra peppers. But an extra special dish for me is stuffed peppers. The ones from the garden have so much flavor for this. I have 5 plants, so having enough peppers to do a batch of whole, stuffed peppers feels like a luxury.

    Unfortunately, my son won’t eat the pepper itself when I make this, so I usually end up making a spin-off “unstuffed” peppers recipe. You basically mix the same ingredients as you would for the pepper filling (ricotta, eggs, rice, favorite herbs / seasoning…maybe add one extra egg so it cooks a bit firmer). Then mix in the peppers (and any other vegetables you need to use up) and cook it like a casserole. He’ll eat everything (peppers and all) if I make the unstuffed version.

    Bell peppers can be prolific when you get their growing conditions right, congrats! They like fertile, well-draining soil that dries out between watering. Temps from 80-90, over 90 they start to drop their flowers. And some protection from scorching sun.
