If you’ve been missing sugar cookies on keto, these are a must try. They use fathead dough (almond flour + mozzarella base) but you’d never guess once they’re baked!
* 2 oz. cream cheese * 1 cup mozzarella, shredded * 3 tbsp butter, softened * 1/2 cup powdered Erythritol * 2 egg whites * 1 tsp vanilla extract * 1 tsp baking powder * 1 cup almond flour
**Instructions**
1. To make these sugar free fathead sugar cookies, you should first gather all of your ingredients in one place. 2. Then, melt the cream cheese and mozzarella in a small bowl, microwaved for 1 minute. Making sure to mix well to combine. 3. In a separate bowl cream the butter, sweetener, vanilla and egg whites. Then add baking powder and almond flour and continue mixing. The mixture will be crumbly. 4. At this point, add the cream cheese mixture to the flour mixture and stir. Hand work dough until fully combined and shape the fathead dough into a ball which you will let rest for 5 minutes. 5. Shape into a cylinder (like store bought cookie dough), and, refrigerate 30 more minutes. 6. Cut this easy to make keto fathead cookie dough into 12 slices. Then bake at 350 F in a preheated oven for 15-18 minutes.

I tried these today and they turned out really good. Only difference is I added 1/2 tsp of xantham gum and 1 tbsp of coconut flour to make them thick and fluffy.
