I’m nothing if not an efficient girlie so of course, I’m all about a good one-pot meal — and these stuffed peppers are one of my go-to dishes when I need something quick, delicious, and still impressive.
I made these along with a hummus platter, Greek salad, and an orzo salad for a Mediterranean themed meal!
Ingredients:
* 4 bell peppers
* 1 lb ground beef
* 1 cup cooked rice
* 1 can (15 oz) garbanzo beans, drained
* 1 can (15 oz) crushed tomatoes
* 1 small onion, diced
* 4 garlic cloves, minced
* ½ cup chicken broth
* Salt & black pepper to taste
* 1 tsp smoked paprika
* 1 tsp cumin
* ½ tsp oregano
* Olive oil
Directions:
1. Preheat oven to 375°F
2. Cut tops off peppers & remove seeds, set aside
3. Sauté onion & garlic in olive oil until soft. Add ground beef, cook until browned.
4. Stir in rice, garbanzo beans, crushed tomatoes, broth, and spices. Simmer 10 min.
5. Fill peppers with mixture and place in baking dish.
6. Bake 30-35 min or until peppers are tender.
