    1) How old is your oil? Foaming can result from old or contaminated oil. 2) barefoot while frying…feeling brave are we?

    The foaming seen when frying finely diced onions is a normal chemical reaction. The high water content in onions turns into steam, creating bubbles. These bubbles are stabilized and trapped by natural soap-like compounds (saponins) and proteins released from the onion cells as they cook. The sugars also released make the liquid in the pan thicker, helping to hold the foam. A finer dice and higher heat will make the foaming more intense. So, high heat + fine dice = foam.
