


This was delicious!!! Meal prepped for the week
Pineapple Chicken Method:
Add the veg oil into a big skillet, heat to medium/high
Add in cut up chicken thighs (skin removed, cut into chunks) (You can season the chicken however you want! I just did salt & pepper lol)
Cook until golden brown, remove from skillet (try to leave as much oil still in the pan)
Cut up pepper (I just did one med/large green bell pepper) and add into heated skillet
Let cook for a bit then add in green beans (you can also do, literally any other veggie and the macros would probably be similar. This is just what I had on hand tbh. I wouldnt say the green beans even pair that well with this dish lol but I like them)
Let cook even longer then add in your pineapple chunks
Make your sauce:
Mix chicken bouillon, honey, truvia sweet complete, and pinapple juice to a bowl/measuring cup. Add in warmed water (I just used water from my instant kettle) and then stir. You could also add water in and then microwave a bit.
Add in cornstarch (I recommend to use WAY less than I did…. was a bit too thick. I think 16g wouldve been perfect)
Stir to make sure there are no clumps!!! (You’ll need to stir again right before adding it in)
Forgot to add in that I added about 30g of garlic, diced. Throw that in right before the sauce
Pour over sauce, making sure there are no cornstarch clumps
Add back in chicken
Just cover and let chill
To assemble, I cut up however much bok choy I want and put it at the bottom of a bowl. Then, I add in the portioned amount of the pinapple chicken & add in the cashews. I microwave the shit out of it for like 4 minutes covered w parchment paper, and I also added in extra water bc the sauce was sooo thick lol. Add the rice on top and serve!
