Hi everyone, I’m a 50-year-old woman who started dieting again this year after regaining lost weight. Because of work, I have little time to cook, so lunch is usually my main meal. For about 5 months I’ve been eating hwe dup bap almost every day to keep things light and veggie-focused, but I’m getting tired of it. I sometimes crave bread or snacks late at night, but I still want healthy, vegetable-based Korean meal ideas for lunch besides hwe dup bap. Any suggestions would be much appreciated!

    A couple options that would involve cooking when you do have time and keeping the leftovers in the fridge. And then microwaving when you are reading to eat.
    – Japchae: glass noodles (referred to Korean stores and recipes as sweet potato noodles) and veggies stir fried together
    – Doenjang jjigae: soybean paste stew that is also loaded with vegetables

    This is one of the Korean meals that I think more people need to know about. They should be marketed as “Korean Sashimi Bowls” and I think they’d be very popular. Where do you go for yours? I like Arado.

    Kimbap is veggie-packed, can even be vegan.

    Sanchae bibimbap, Namul bibimbap, Gondrae bibimbap… all bibimbaps are.

    My pick this season is yeolmu boribap and yeolmu bibim guksu.
