ZUCCHINI FRITTERS:
1 large zucchini, sliced
Salt for drawing moisture
3 eggs
Salt and paprika to taste
Grated cheese
Fresh dill, finely chopped
All-purpose flour for coating
Vegetable oil for frying
CUCUMBER YOGURT SAUCE:
1/2 cup Greek yogurt
1 cucumber, peeled and grated
Fresh dill, chopped
1 tablespoon fresh lemon juice
Pinch of salt
VEGETABLE RICE:
1 cup basmati rice
1 small red onion, diced
1 bell pepper, diced
1 red bell pepper, diced
Salt to taste
Vegetable oil
STEP-BY-STEP INSTRUCTIONS:
Slice zucchini and sprinkle with salt. Let sit 10 minutes to draw out moisture.
Beat eggs with salt and paprika.
Mix in grated cheese and chopped dill.
Pat the zucchini dry with paper towels.
Dip each slice in flour, then in egg mixture.
Fry in hot oil until golden brown on both sides.
For the Sauce:
Grate peeled cucumber and mix with Greek yogurt.
Add chopped dill, lemon juice, and salt.
Mix well and chill until serving.
For the Rice:
Cook basmati rice in salted water for 10 minutes until tender but with a nice bite.
Drain and rinse with cold water to stop cooking.
Sauté diced onions and peppers in oil until soft.
