Here I’m cooking one of my all-time favorites – Chicken Parmigiana Light – a version of the famous Chicken Parmigiana made with chicken thighs topped with tomato and mozzarella and nestled in a bed of fresh tomato sauce. The thighs tend to stay moister during cooking, and the flavors of this version are lighter and brighter than the traditional one – perfect for a weeknight dinner. I get that this clip from an old show is her light version of the beloved meal (heaven forbid in the 21st century we have a heavy or really tasty meal once in a while), but those sopping and thick tomato slices on top of the thighs … yuck. Troppo zuppo. This is miles away from a satisfying chicken parmigiana dish.

  15. Looks so delicious! I personally quit using vegetable oil and other seed oils because itโ€™s high in omega 6 and super processed. Virgin avocado oil is a healthier option for higher heat cooking. About 375 degrees F.
