Did some smoked wings on the WSM with half cherry half apple wood. No water bowl and a full lit chimney of charcoal. Vacuum sealed for 8 hours, half lemon pepper and half buffalo. Pat dried prior to smoking then seasoned with oil and SPG. 50 minutes at 375 degrees. After smoking I tossed the lemon pepper wings with butter and lemon juice and the buffalo wings in butter and buffalo sauce.

    I like to smoke, sous vide, and then grill them. Season along the way but sauce at the end.

    I do them lower and slower, but I’m interested in your temp/time. When in a relative time crunch I often resort to direct heat or the vortex despite liking smoked wings the best. People love my smoked wings so I’m always looking for situations where I can provide them.

  9. I don’t think anyone can beat the fried texture. But I smoke mine on the egg all the way through. Best texture I’ve found is to add honey to them the last 30-45 mins of the smoke. Helps crisp up the skin.

    Offset fire on the Weber kettle at around 220-259 for 45 mins. Always good

    Vortex is the way. No need to par cook, or run the grill and fryer both. It’s the best blend of ease and quality, short of ordering out for them.

  12. Honestly, unpopular opinion here probably, but I wasn’t overly impressed with smoked wings. Everyone else had no issue, but I missed the crunch of them being fried like I was used to from my best friend’s mom growing up.
