Brown sugar, salt, black pepper- dry brined for about 20 hours
Left uncovered for 16 hours to develop pellicle
Smoked for 6 hours at between 175/200
Turned out phenomenal

    I lost what I was 90% sure was a king salmon like….3 feet from the boat once out on Michigan. It broke my heart (and line), would have been my crowning catch as I mostly stick to interior lakes of wi. Got a nice rainbow trout later though so it worked out. Looks fantastic and nice catch!
