Slice them semi thin and eat it as KBBQ. Its gonna blow your mind. Me and my friends by this cut at Costco and do it all the time. You can even marinate them with premade galbi marinade that you can get at an Asian market too.

FYI you gotta cook these low and slow, these are not like a typical steak. They’ll be inedible if you just cook them normally.

If you try anything other than long, low, and slow with those you’ll be chewing for eternity. Look into braising. And mashed potatoes. Then you got a meal.

I did the exact same thing a couple months ago—I got super psyched about the marbling but I found out there’s more connective tissue than a ribeye, making it a bit chewy. If you sous vide for a long time at temps > 133F it’ll break down

You bought a $5 scratch ticket and won $2. These are chuck, not even a true short rib. You can buy a retail priced $6-$7/lb 7-bone steak to get a chuck short rib, top blade steak, and chuck eye all at once.
