I made a tofu tikka masala and the sauce is so bland! How can I improve it? I want to freeze in smaller portions, but I need to fix this sauce!!
I made it with onion, garlic, cumin, garam masala, chili powder, turmeric and coriander. Then added a can of coconut milk and tomato sauce. Salt and pepper of course. Still bland so I added a little tamari. Nothing.

Powdered or cube vegetable stock, not the wet sort. Cures a multitude of ills.
Sugar, more salt, msg, more fat?
Add more cumin and garam masala. If you have it add cilantro or coriander powder and dried fenugreek
Add butter & Kasuri Methi (in addition to any/all spices you will be trying) – see the difference!!
Add butter, ginger, cream, more spices all around, and some chili powder to bring some heat to it.
Add more garam masala.
Also, next time, ditch the coconut milk or at least add far less of it.
Add butter, then in the butter roast spices such as cumin, coriander, little cinnamon, red chili and fenugreek leaves. You want to roast all of these in the butter on low heat and then add the existing sauce to the pan. Increase the heat for a few mins and mix well. Add lemon juice and salt.
More salt.
For future reference tikka masala doesn’t have coconut milk lol. It’s tomato and a splash of cream. That’s probably what made it mild.
For now, cook up some more tomato paste with salt and cumin stir it into your mixture and add kasuri methi and garam masala at the end!!! Some spices in Indian cuisine need to be put at the end to get maximum aroma.
Use ghee instead of butter, toast your whole spices before grinding them, reduce your sauce after adding coconut milk or use coconut cream instead.
