🥒 Zucchini Pasta with Chicken & Cream Cheese

✅ Ingredients:
• 1–2 zucchinis (depending on size)
• 300–400 g chicken breast
• A handful of cherry tomatoes (about 10)
• 2 tablespoons cream cheese (e.g. Philadelphia)
• Olive oil — for cooking
• Salt & pepper — to taste
• Dried herbs/spices — garlic, dried tomatoes, basil (or your favorite seasoning mix)
• Grated Parmesan — optional, for serving

👩‍🍳 Instructions:
1. Prepare the zucchini
Wash the zucchinis and use a vegetable peeler to slice them into long, thin ribbons — like pasta. You can cut them into thinner strips if you prefer.
2. Cut the chicken
Dice the chicken breast into small bite-sized pieces.
3. Cook the chicken
Heat a pan with a bit of olive oil. Add the chicken and cook on medium heat until golden and nicely seared.
4. Add cherry tomatoes
Once the chicken is well browned, add the halved cherry tomatoes. Sauté together for about 1 minute.
5. Add zucchini ribbons
Add the zucchini strips to the pan. Cook everything together for 2–3 minutes, until the zucchini softens slightly and cooks down.
6. Add cream cheese & seasoning
Stir in 2 tablespoons of cream cheese and your favorite herbs or spices (I used a mix of dried garlic, tomato, basil, salt, and pepper). Mix everything well.
7. Finish cooking
Let everything simmer for another 2–3 minutes on low heat, until flavors blend and the sauce slightly thickens.
8. Top with Parmesan
Just before serving, sprinkle some freshly grated Parmesan on top for extra flavor. Totally optional — but highly recommended!
