Well…I was a dumbass and forgot to take a before cutting. But here is what is left of basically a 30" pork loin. Apparently everyone liked it.
Cream cheese, 2pkg of bacon fried and cut up, mix into whipped cream chease. Sliced apples over the whole lot. Some cinnamon and brown sugar on top of the apples. Roll up and tie.
Rub was brown sugar, garlic, onion powder and a bit of oregano.
Used applewood pellets.
225⁰ for 2hrs.
350⁰ for 40min until internal reached 138⁰
Then 500⁰ til 145⁰ to get some crust.
This was all that was left. About 10" of a 30" pork loin.
I'd totally do this again.

Wow, that looks delicious and I’m done a few pork wines and they’ve been pretty decent but that looks like a pretty good idea
