Couldn’t pass this up at Costco.. what should I make?

  3. that picahna is cut very strangely against the grain…. usually you cut it with the grain so the last cut with the knife is against the grain.

    Couple of steaks.

    I also like to use cuts this to cube up and make good chili with. Add on some fatty cuts of something else or ground pork or short rib and it’s delightful when left in his sized chunks.

    You can buy these from us as cryovac and save a few bucks also. They are basically trimmed all the way up or they have a cap if you are lucky enough to be in a region with picanha!

    Is this not actually just those terrible chuck “short ribs” everyone has been tricked by at least once?

    I’ve never been happy with those.

    im confused why you couldnt pass this up? this is normal to high priced for this cut not at Costco, and it’s missing the best part, the fat cap

    After many years of grilling steaks and trying all sorts of cuts – this is my family’s absolute favorite. Hard to find at my Costcos in NYC. They go quickly. Congrats!

    My process: Let out for a bit to help come to room temperature, light sprinkle Montreal steak, grill as hot as possible until internal temp 135-138. Pull off. Hit with a bit of butter. Let sit 5-7 minutes. Enjoy!

    Steak. 6 hours SV, followed by sear over intense heat should do these cuts well
