BUFFALO, N.Y. — A new food truck is rolling into Buffalo events, serving up spuds in any form you can imagine.
Jeanetta Sullivan, owner of Pudgy Potatoes, says while the truck is brand new, the business has been years in the making.
“We started in 2022 as a catering business. As of 2025, we just launched our new food truck for the city of Buffalo,” Sullivan said.

Her love for potatoes comes from both creativity and necessity.
“You can eat a potato in so many different ways. You can fry, bake, pan sear,” she said. “I came from being less fortunate, so potatoes were always around. They’re cheap, you can make them in all types of ways, and you can eat them for breakfast, lunch, and dinner. My love came from lack, and I just made lemonade out of lemons.”
The menu is packed with potato twists.
“We serve all potato-based products,” she said, with loaded potatoes being the signature dish. “Fresh-cut fries, chunky potato bowls, sweet potato egg rolls, sweet potato cookies, sweet potato pies. I’m even thinking about a sweet potato milkshake for next summer. We’re just potato crazy.”
The food truck is already making the rounds in Buffalo, with planned stops at the Funk Fest at MLK Park on Sunday, August 24th, and regular visits to the Buffalo Niagara Medical Campus on Wednesdays and Fridays through September.
Starting October 1st, Pudgy Potatoes will be parked at Utica and Humboldt from 9 a.m. to 9 p.m., Monday through Saturday.
Sullivan, who calls herself a “mompreneur,” says her kids are just as much a part of Pudgy Potatoes as she is.
“My oldest, Mike, he’s 13, and he actually wants to become a chef. Dylan is 8, and my daughter Dakota is 5 years old. I do it for them,” she said.
