This is my favourite aged cheddar. It is locally produced. They are known more for their goudas which have won international awards. But this cheddar is the champion in my books.
Very bold flavour and loaded with lactic acid crystals. Surprisingly, it is not as sharp as one would expect a cheese like this to be.

It pairs well with a good port and Ripe fruit. It is also great in salads, omelettes, chili con carne, pasta, sandwiches… the list goes on.
