I meal prep on Saturdays but I like to do some prep the night before to make my real prep day go as quickly & smoothly as possible!

Here’s what I prepped:

  • Cut up broccoli

  • Diced sweet potatoes

  • Sliced bell peppers

  • Cut + marinated chicken breast

  • Washed, dried, & de-stemmed grapes

  • Apple cinnamon oatmeal muffins

Oatmeal Muffins Recipe:

  • 2 cups rolled oats

  • 2 scoops vanilla protein (50-60g)

  • 1 tsp baking powder

  • 1.5 tsp cinnamon

  • 1/4 tsp salt

  • 1 cup milk

  • 1/2 cup plain greek yogurt

  • 1/4 cup maple syrup or honey

  • 1 tsp vanilla extract

  • 1 tbsp melted butter

  • 1 peeled & finely diced apple

Instructions:

  1. Preheat oven to 350°f + line muffin tin

  2. Mix dry ingredients, then mix wet ingredients & combine. Fold apples in to mixture.

  3. Scoop batter into muffin cups, 3/4 full.

  4. Bake 25-30 minutes until tops are golden and set

  5. Cool completely before storing. Enjoy!

Doing this “prep before the prep” makes meal prep day way less stressful! If you have the time the day before, it’s so worth it.

    I also do this. Just like to make life a little easier on Sunday, get everything I need out of cupboards and all my containers ready.
