  2. Hi. Looks well thought out and well made.

    Now, to be picky…

    1. Tagliatelle are egg pasta (flour, water *and egg yolks*) so it should only ho with meat – plain white spaghetti would be ideal,
    2. The pasta should be tossed in the hot pan with a spoonful of pasta water, to emulsify with the frying oil and create the little “white clam sauce” the connoisseur expects,
    3. Good for the orange+onion salad, make sure those are “Tropea* (sweet) onions and not just any red onion (it’s a salad, they’re eaten raw, you want them to be crunchy not teary) – also, add some walnuts or almonds or pine kernels, never pistachios.
