INGREDIENTS
⚬ 3 pounds fresh peaches, peeled, pitted, and sliced
⚬ 1 medium lemon, zested and juiced
⚬ 1/3 cup granulated sugar
⚬ 2 teaspoons cornstarch
⚬ 1/2 teaspoon vanilla extract
⚬ 2 cups all-purpose flour
⚬ 3/4 cup powdered sugar
⚬ 1 tablespoon baking powder
⚬ 1 teaspoon salt
⚬ 1/2 cup salted butter, cold
⚬ 1 cup half and half
INSTRUCTIONS
1️⃣ Preheat oven to 350℉ and lightly grease a 9×13-inch baking pan.
2️⃣ In a bowl, toss sliced peaches with lemon zest and juice, sugar, cornstarch, and vanilla. Spread evenly in prepared pan.
3️⃣ In a separate bowl, mix flour, powdered sugar, baking powder, and salt.
4️⃣ Cut in cold butter using a pastry cutter or food processor until mixture resembles coarse crumbs.
5️⃣ Stir in half and half to create a thick, sticky batter.
6️⃣ Drop batter in clumps over peaches to create a cobbled topping.
7️⃣ Bake for 1 hour until crust is golden brown. Cool slightly before serving.
