Grilled some korean short ribs on the Weber Searwood today. Started by setting the temp to 500. It got there in less than 10min. Then I set the manual mode to 9 (out of 10) and just grilled the meat like I would on a normal grill. Ribs came out amazing, with lots of charcoal flavor (used Royal Oak charcoal pellets). The first batches of ribs had some amazing sear marks too.

In the pic, to the left is a Weber gas grill. I dont think I will be needing that any longer.
