I asked the guy behind the meat counter. He said it’s a new thing they told them to start doing and the decapitated ribeyes are still sold at the same price as regular ribeyes.

Morally torn by this, I would never buy a capless ribeye, but I would *very* happily just buy rib eye caps. Roll them up in cling film and form them like you would a fillet roast and pan fry medium rare and its basically the best steak you can get.

I feel like they know this is some foolery because they’ve got the steaks oriented so the cap end is under the price sticker. Is there any indication that the cut doesn’t include the spinalis?
(Although on the DL @ 16.99 a pound, I’m sweeping my arm across that top shelf and running for the register)
