Almost 2 years ago, my partner and I made the big decision to move in her aging parent with us to become her caregivers.

There was a lot of responsibility and changed that came with that. And cooking was one of the biggest things to adjust to.

This video is from last year, but I thought I would post it again. Because it was a great soup and a good meal idea for a family with an elderly parent.

Our aging parent will require soft and lower sodium food. Of course the rest of the family doesn’t. So I always need to make meals two ways. Sometimes there are super simple adjustments like just adding a bit more salt to the rest of the families at the end. And then sometimes those adjustments are a bit more.

This is how I make a healthy, easy soup for lunch that works for our aging parent and the rest of the family.
