Local food bank gave me a ton of pre diced tomatoes. What do I do with them?

Pico de Gallo or Shakshuka for breakfast 😋

Fresh salsa without having to dice tomatoes forever! onions, cilantro a jalapeno or however many you like in it. On top of refried beans, rice, chips, quesadillas, in a burrito, on a salad, out of a bowl as a “salad”!

    Tomato sauce for pasta

    Pizza sauce

    Chicken stew

    Gazpacho

    Shakshuka

Tabouleh is refreshing. Since they’re diced it’s already half done lol.

Don’t make pico de gallo, salsa or any other fresh recipes. Freezing and thawing tomatoes ruins them texturally, so the ideal use is a recipe in which you don’t rely on the texture of fresh tomatoes for it to be good.

They’ve perfect for some tasty burritos!

They are kind of annoying for this to be honest.

but you’re not allowed to complain cause beggars can’t be choosers even if the donations are inconvenient.

I think the tomatoes are *post* diced.

    But Shakshuka would be call.

You can do ‘menemen’ for breakfast with those. It’s a Turkish dish.

Omelette or fry up with some diced onion and diced bacon and have it on toast or on a fresh well buttered roll or as a fancy topping on some snags

Mmm, mix it with olive oil (extra virgin of course) and a bit of basil. Add pepper and salt to taste.

Get some yummy white bread, sourdough bread is best, grill the bread until it gets crunchy.

Use a garlic clove, rub it onto the bread, put tomato mix, and you got bruschetta 😍

I’d make pasta, but would also have a few slices of tomato and pepper on toast.

Toasted tomato sandwiches. All you need is toast, mayo, tomatoes, and some salt & pepper.

It is a puzzle! I would start putting them back together and see just how many tomato’s they have you

Fry it in a pan until cooked up and then add eggs and scramble. It’s delicious.

frankly, i would throw it away. when vegetables are cut into small pieces, it accumulates high bacterial content very quickly. it would be better if the food bank handed out whole tomatoes instead.

greek fries with diced cucumbers, lamb, fries, and tzatziki sauce on top

Omelette for breakfast everyday for the week just break some off and keep it frozen so it stays good. Throw it into a pan with a tiny amount of olive oil and it’ll be great when you put in the eggs and whatever else.

layer the bottom of a roasting pan with a chicken over the top of them. add olive oil, red wine vinegar, carrots and onions, seasoning, and basil (fresh). roast and allow chicken fat to cook into the tomatoes.
use a hand blender to emulsify sauce. yes its a suace but can be served in pasta, with roast chicken, or added to sandwiches. one of my favourites.
