• 9 1/2 oz gluten free flour
  • 2 1/2 tsp baking powder
  • 1 1/4 tsp baking soda
  • 1/4 tsp xanthum gum (omit if gluten free flour already has it)
  • 3 flax eggs
  • 1/2 cup + 2 Tbsp organic sugar
  • 1/4 cup + 1 Tbsp brown sugar
  • 3/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 5 Tbsp dairy free butter, melted & cooled
  • 2 tsp vanilla extract
  • 3/4 cup + 2 Tbsp applesauce
  • 1 1/2 cup cored granny smith apples, peeled & diced
  1. Grease and parchment line and 8-inch square cake pan. Preheat oven to 325F.

  2. In a bowl, whisk together flour, baking powder + soda, and if using, xanthum gum. Set aside until needed.

  3. In another bowl, add flax eggs, both sugars, salt, cinnamon, and nutmeg. Whisk to combine for about 20-30 seconds.

  4. Add melted butter and combine. Then add applesauce and vanilla. Whisk to combine.

  5. Add flour mixture and whisk until batter forms. Add diced apples and fold in well.

  6. Add to prepared cake pan and spread evenly. Bake for 25-30 minutes or until golden brown, rotating halfway in.

  7. Remove and let cool completely. Carefully remove from pan then cut and serve.

  8. Store in an airtight container for up to 2-3 days.

    i just made something similar last week but added a touch of ginger and it was amazing i’m going to try your version too though love the idea of using granny smiths for that tartness thanks for sharing 🍏✨
