First time giving a try at smoking Ribs! I used the 3-2-1 method and they turned out fantastic!
I tried 3 different recipes for the 3 racks.
2nd and 3rd picture – Left to right, also Top to Bottom for the 1st pic.
Left – Kinders The Blend rub, glazed with Sweet Baby Rays BBQ sauce
Middle – Kinder Cowboy butter rub + Kinder Gold BBQ sauce for glaze
Right – Indian rub (ground ginger, cumin, Jaggery,red chilli, turmeric, salt, pepper, garam masala), glazed with a Tamarind Chutney sauce (Tamarind concentrate, Jaggery, ginger, cumin, red chilli)

Smoked with Cherry wood, 3 hours at 185, then 225 for 2 hours in foil (added brown sugar, butter and some apple juice), then 225 for 1 hour without foil and glazing with respective glazes!

Takeaway – They all came out fantastic, however not exactly fall off the bone, had a bit of a chew to it, which I didn't mind. The one with the Indian seasoning definitely had a milder taste than I expected. The first two were more moist compared to the 3rd (idk why, maybe because I used Dijon mustard as a binder on those 2 and not the Indian spiced one). But overall, extremely happy with how these turned out and I got a B grade for my draft picks 😆
