High Protein Breakfast Quesadillas

I’m a sucker for tortillas. Savory or sweet—there’s nothing I won’t stuff into those fibrous pockets of endless potential.

On the hunt for a high-protein, high-volume, low-cal breakfast- I landed on this hot, veggie-packed dish to fuel body and brain.

Nutrition:
387g / 350 cal / 53g protein / 5g fat / 33g carbs

Ingredients:
• 1 Mission Carb Balance Soft Taco Tortilla
• 80g Bob Evans Egg Whites
• 75g Great Value Fat Free Mild Cheddar
• 72g Land O’ Frost Canadian Bacon
• 30g Mushrooms
• 30g Red Bell Pepper
• 15g Spinach
• 10g Yellow Onion
• 5g Chives (fresh)
• 30g Salsa
• Salt/seasoning to taste

Instructions:
1. Preheat pan (med-low) + air fryer/toaster oven (~400°F)
2. Dice mushrooms, peppers, onion
3. Sauté veggies, spinach & sliced bacon ~10 min
4. Add egg whites, stir until set and incorporated
5. Season to taste
6. Spoon into tortilla, top with cheese
7. Microwave 20–40 sec to soften and pre-melt cheese
8. Optional: Brush edges with water/oil and crimp with fork to seal
9. Optional: Brush outside with oil for browning
10. Air fry 8–15 min at 400°F
11. Let cool 2–5 min, slice, top with chives, serve with salsa

Super modular and beginner-friendly. Mix it up with avocado, sour cream, turkey bacon, jalapeños, hot sauce, kale- whatever meets your goals!
