Like the title says. One of you convinced me to try the no wrap method and it was a success. Ribs and corn on the cob for dinner! After 5 hours on the kettle these ribs were the perfect amount of tender and juicy, but still had a satisfying chew. Bonus picture of some cream cheese I smoked at the same time.

    I’m a big supporter of team unwrap…whenever I wrap, they come out steamed and gloopy…

    Smoked cream cheese…interesting. Makes sense as a target because it has a high water content and so will readily accept the smoke? Just serve on crackers?

    Next try hot & fast, cut in 2 bone sections @ 300°+ for 1.5 hrs or til 145°, you won’t regret it
