So, super simple vegetarian pasta, this is my first post here. You get over a pound of food per serving (684g/serving, 7 servings) for 512 calories.

Boil your pasta first, I used Carbe Diem, but you can use regular pasta or protein pasta, the calories are driven up more though. SAVE THE PASTA WATER.

Alfredo Sauce is 2 packages of extra firm Mori-nu silken tofu, 1 tbsp of nutritional yeast, 7 garlic cloves, and 1 cup of your pasta water. Blend until smooth and add an additional half cup of the pasta water and blend again.
I roasted my broccoli (tossed in garlic and lemon juice) and mushrooms without oil. 400F for the broccoli and 450F for the mushrooms.

Afterwards, to save time I boiled the spinach and meat substitutes (Quorn chiquin fillets and beyond steak tips) in a bit of water, added the peas for a few minutes and then added the "Alfredo" sauce, mushrooms, broccoli and pasta into the pot.

Season with salt and fresh ground black pepper to taste (optional, but I added a bit of garlic powder MSG, but you can skip this). Portion into meal prep containers and garnish with more black pepper and parsley.
