Lunch: White bean and kale soup with potatoes and Italian sausage. (I actually ate 2 cups more than what is in this photo. This is actually a 1 cup second helping. I ate the first helping too fast cause and forgot to photograph it.) 478 calories
Snack: Venti unsweetened black tea lemonade from Starbucks. (not pictured) 70 calories
Dinner: Summer Picky Plate of air fryer “fried” zucchini in homemade leftover breadcrumbs, air fryer roasted cauliflower (and the odd roasted zucchini cause I ran out of breadcrumbs), homemade lemon pesto sauce, air fryer roasted red potatoes with spices, and cold leftover grilled chicken. 940 calories
Dessert: Fresh strawberries and a touch of honey. Nothing better in a hot summer night. 112 calories
For health reasons, I prioritize lower saturated fat, high flavor, high fiber, lean protein, lower carb and high volume/satiety.
