This salad is all about balance — smoky grilled zucchini, sweet cherry tomatoes, creamy bocconcini, and a touch of red onion, all tied together with a tangy balsamic dressing. It’s quick to prepare, beautiful on the table, and absolutely delicious.

Here’s the recipe so you can try it at home:
6 fresh zucchini
300g cherry tomatoes
1 pkg bocconcini medallion slices
½ tsp garlic powder
1 tsp salt
¼ cup olive oil
3 tbsp balsamic vinegar

Simply grill the zucchini until tender with beautiful char marks, toss with the tomatoes, bocconcini, and onion, then drizzle over the olive oil and balsamic dressing. Give it a gentle mix, and your grilled zucchini salad is ready to enjoy!
