Spaghetti Aglio e Olio Recipe
Spaghetti Aglio e Olio is a classic Italian pasta dish that’s simple, flavorful, and comes together in just minutes. With garlic, olive oil, a hint of chili flakes, and fresh parsley, this recipe is perfect for busy weeknights or when you’re craving authentic Italian comfort food.
Ingredients
1 lb dried spaghetti
½ cup extra-virgin olive oil
6 cloves garlic, thinly sliced
¼ teaspoon red pepper flakes (adjust to taste)
¼ cup fresh Italian parsley, chopped
1 cup finely grated Parmigiano-Reggiano cheese
Instructions
Cook the pasta
Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 10–12 minutes. Reserve ½ cup of pasta water before draining.
Prepare the garlic oil
In a large skillet, heat olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 1–2 minutes.
Add a little heat
Stir in the red pepper flakes and cook for about 30 seconds, being careful not to burn the garlic.
Combine pasta and sauce
Turn off the heat. Add the drained spaghetti directly to the skillet along with a splash of the reserved pasta water. Toss well to coat the pasta in the garlic-infused oil.
Finish and serve
Sprinkle in chopped parsley and grated Parmigiano-Reggiano. Toss again until everything is evenly mixed.
