While “green onion” isn’t in the episode description, No Reservations Season 4, Episode 14 (“Spain,” aired August 18, 2008) gave us one of the most beautiful onion-centric rituals ever: the calçotada.

Anthony Bourdain throws on a bib, heads to Catalonia, and joins a full-blown party where giant green onions (calçots) are charred over an open fire, peeled, and dunked in romesco sauce.

It’s smoky, messy, onion-fueled chaos… and Bourdain calls it exactly the kind of party he can get behind. Honestly? Same.

    I grew up watching him thanks to my parents. RIP to one of the best (if not the best) food journalists of our time.
